2 1/5 Pound(s) strawberries
1 2/3 Cup(s) water
2 1/2 Cup(s) sugar
Stem and rinse the strawberries, cut them in smaller pieces if they are large. Cook in water for 10-15 minutes, and mash the berries when soft.
Strain the liquid, let stand in the strainer for 30-60 minutes to get most of the liquid out. Pour back into clean pot, heat up, and add sugar.
This has no preservatives, so will only last a couple of weeks (in fridge). To serve, pour some of the concentrate in a glass (or pitcher), and add water to taste. A typical ratio is on part concentrate and 4 parts water.
